Raffetto's Corp 06-12-2010

People: RB and myself
Feelings: One day, RB brought home some fresh homemade whole wheat pasta and sauce from Raffetto's in Soho. Raffetto's is an old Italian specialty shop that is New York institution and has survived many years of the city's ever changing landscape and economy. A classic establishment like this of course takes cash only.
RB cooked the pasta for about two to three minutes and added some spinach to the sauce. The pasta had the significantly chewy texture, which reminded me of delicious soba. I have tried every kind of whole wheat pasta out there before, but this tasted like no other one I've ever had. This pasta cooked so wonderfully that it made us feel like we were dining at some Italian grandmother's house. The tub of sauce was slightly watery but still big on tangy and fresh flavor.
I am not so sure if I could go back to a box of dry pasta after this experience, so I sure hope RB will bring home more fresh pasta from Raffetto's. Perhaps their famous raviolis and tortellinis next?
